The process to make spirits : choosing grapes

The grapes are from the estate, mainly from the Côte de Rouffach. Vintages with healthy grapes and no noble rot are privileged. The aroma, flavour and delicacy of a large marc depends closely on the quality of the grape: they all come from the family estate, in organic and biodynamic. We choose healthy and mature grapes, those with pure fruit aromas and expressions with a lot of honesty. These characteristics will be amplified by distillation.

Searching finesse

Bottling is done after a few years of aging, when the marc has acquired its roundness and the bouquet is fully expressed.

The Marc d'Alsace Gewurztraminer is kept in stainless steel tank with a small passage of oxygen to allow it to express its fine and fruity aromas.

The Marc de Pinot Noir is preserved in oak barrels that brings it its beautiful golden color then in stainless steel tank to reinforce its structure and character.

Only these two grape varieties are distilled because they are the most typical.
